A Brutally Brisk Beginning

    One week down, fifteen to go…We can do this! We can endure another month of cold weather and clouds, and then the sun will start to shine again. Speaking of weather, last week was bitterly cold, windy, snowy, and miserable. It was difficult to be motivated to go anywhere and do anything. However, it is never too cold to make a yummy meal. Thank goodness for heated apartments!

     If you have not noticed already, this blog is named “Mindful Meals” and I will give a little synopsis of last week’s scrumptious foods. To start off the week, I meal prepped with chicken, rice, protein bites, and breakfast burritos. Sunday night started with cooking a double batch of white rice. I then cut four chicken breasts into cubes and grilled them in a pan. I then gave them a Teriyaki twist with a homemade sauce. Next, I cooked seven scrambled eggs, mixed them with my rice, added pepper, and flavored them with soy sauce. I dished the meals into containers and put them in my freezer.

Then, I created my protein bites. These protein bites are amazing, very high in protein, easy to make, and a great post-workout snack. The bites are created with old-fashioned oats, peanut butter, honey, chocolate protein powder, and chocolate chips. The process is simple. Mix the ingredients together, roll them into balls, and pop them into the refrigerator or freezer. 

Finally, I made breakfast burritos. I used low-carb tortillas, six scrambled eggs, shredded cheese, and turkey sausage. I combined the eggs, sausage, and cheese into the tortilla, folded it into a burrito, and crisped the burrito in a pan. These foods are SO easy to make and hold their quality for months. Meal prep is awesome for college students who do not have time during the week to cook meals!

Finally, to recap week one of the semester. Classes are tough! Strategic Analysis and Marketing Research are no joke! These classes require a significant amount of reading, writing, and analyzing. Advanced Business Analytics consists of Microsoft Excel and SPSS work. Principles of Social Media involve creating a blog and posting twice a week. Thankfully I am taking Visual Literacy, which is a discussion-based course. The workload is light, and it is an enjoyable course. As a mere Sophomore, I definitely feel underprepared for these upper-level courses. However, I will graduate in May of 2024 and must take upper-level courses in order to graduate early.
