Traveling, and Running, and Eating, Oh My!

Hello everyone! Let’s start off this post with a recap of last week. Last week was the second week of the Spring semester. My workload is heavy, my schedule is busy and my body is sore. I spend the majority of last week completing homework and working out. In Strategic Analysis, we analyzed our first of 12 cases. Although that course is not the easiest in the world, it is extraordinarily intriguing. Strategy is so cool! I am chugging along in my other classes, completing my work on time and to the best of my ability. Unrelated to my weekly classes, I have a sixth class. This class is fulfilling my General Education 10 requirement, and it is my trip to Germany. Last weekend, I attended the first meeting for this trip. We discussed course requirements, introduced ourselves and discussed the places we will visit in Germany. We will visit Hannover, Berlin, and Munich and we will travel to those cities via train. These trains travel up to 130 mph. Not only will we visit these cities, but we will have the opportunity to tour various companies. I am beyond excited to study abroad and experience another culture.

Continuing with the adventures of week three, I worked a couple days last week, attended Fusion, and prioritized my upper body in my workouts. I tend to avoid back workouts and was able to complete an amazing back workout into my week. Mondays are my designated back days and I look forward to it! I worked my biceps, triceps, shoulders, quads, and calves on the other days. In addition to lifting, I am working on increasing my running mileage. In middle school and high school, I was a very successful cross-country and track runner, but I suffered from many injuries and did not pursue sports in college. Since high school, I have not prioritized running long distances or focused on increasing my speed. Over the last two weeks, I have run on the treadmill every day and have made my way to a 4 and a half mile run. Finally, last Wednesday, I braved the cold weather and ran outside. I wore three layers, gloves, and earmuffs and my legs were still FREEZING. I pushed myself pretty hard and I ended up running those miles faster than I have run in a couple years. Hopefully, I can continue to increase my mileage and speed.

Finally, let's talk about meals. I have failed my audience and subscribers. I did not meal prep or make any new meals this week. I consumed many protein shakes, smoothies, yogurt, and breakfast burritos. It may take me a couple weeks to find a rhythm for meal prepping and managing my time. Also, grocery shopping is so expensive. I am spending between 40 and 80 dollars on food per week. Sadly, my weekly check does not surpass how much I have to spend every week. Hopefully, I can find another job to meet my expenses. I will try not to disappoint my readers again but let me know in the comments what types of meals I should make in the next few weeks!

  1. Some meals I would like to see on your blog would be soups (because it's February), desserts and your smoothie recipe! I understand being super busy and I struggle to prep meals every week as well. I find myself making a lot of chicken and rice, spaghetti, taco salad and soups because they're all easy and don't require a lot of prep time.

    1. Soups are such a good idea, especially for this time of year! I have a crockpot, but I rarely use it. I will absolutely have to try out some soups! Thank you for your feedback!

  2. Doing and maintaining meal prep is a hard task to do. It take a lot of time to actually sit there and cook. I defiantly would like to see you push your cooking skills to the test. Just hop on the your high horse and make some Hell's kitchen top stuff. Now I know time and money are to hard thing to find. I use to work in a kitchen as a chef and have a couple recipes of cheap things I use to cook for my family. That were not super time consuming the prep for most of my recipes were only an hour at most. Cooking changes with the dish. I'd be happy to share some ideas.
